Smoked Gouda Bacon Burger

This is one of our favorite burgers to make.  It starts with an 80/20 blend of ground waygu beef, topped with smoked gouda cheese, thick sliced bacon with grilled onions & mushrooms. Make sure you use a good brioche bun that has been lightly toasted so that the black truffle mayo doesn’t soak into the bun.  
  • 2 Pounds SRF ground waygu beef.
  • 1 Vidalia onion.
  • 5 medium baby portobello mushrooms 
  • 8 Slices hickory smoked bacon.
  • 2 Ounces black truffle aioli

Step 1

Form the ground beef into large 1/2 pound patties. This is a very big burger recipe, but you can reduce it if you’d like.  Season both sides with your favorite seasoning. 

Step 2

On a flat top griddle over medium heat, begin grilling the bacon.   

Step 3

Once the bacon is done, use the bacon fat to cook the onion and mushrooms.

Step 4

Grill the burgers after the onions and mushrooms are done, in the rendered fat left over from the bacon.  Add the sliced smoked gouda on the turn and cover with a basting cover to melt. 

Step 5

On a toasted brioche bun base, place the burger then top with bacon, onions and mushrooms.  Enjoy!
